Simply crack your egg into a sieve (make sure its over a bowl) and allow the runnier whites to separate out. Transfer the egg into a small bowl.
Get a pot of water that is half full up to a simmering heat
With a spoon create a gentle swirl, you do not need to create tornado in the water!
Gently lower your egg into the water and set a timer for 2 and a half minutes.
Using a slotted spoon, remove the egg from the water once 2 and a half minutes is up and using your finger check the firmness of the egg white. It should be firm to touch and when you wiggle the spoon the yolk should wobble! Feel free to pop the gg back into the water if you think its not quite yet done or if you like a firmer yolk.
Transfer the egg to a plate lined with kitchen towel and season generously with salt and pepper.
All that's left to do is heat up your beans and pop your bread in the toaster then plate up!
